Penne Primavera - deliciously flavoured with fresh veggies!


Ingredients
Penne pasta
Tomatoes
Onions
Broccoli
Carrots
Green peppers
Basil leaves
Spring onions
Garlic
Olive oil
Garlic
Salt
Red chili powder
Oregano
Italian seasoning

Method
Boil pasta with salt and keep aside. Then boil tomatoes, pour cold water and peel them. Puree half the tomatoes with some water in a blender. (Since I I like my pasta to be very moist, puree is required. If you prefer it dry, you can skip the puree).

Then prepare all the vegetables. Dice the other half of the tomatoes and keep aside. Slice onions, cut carrots, capsicum, broccoli florets and spring onions stems. (You can also add yellow and red peppers, zucchini, or any other vegetables you have in your refrigerator).

Now heat olive oil in a pan, and sautee ginger, onions, carrots, capsicum, broccolli and boiled diced tomatoes. Add salt during sauteing. Cover the pan and let the vegetables cook for some time (depends on how soft you like the vegetables to be). Mix oregano, red chilli flakes or chilli powder and Italian seasoning. Then pour the tomato puree. Mix it all together. Finally add the boiled pasta and mix it well.

Garnish pasta with cheese and spring onions. Your pasta is ready!
