BANANA FLOWER CURRY( ARITI POOVU IN TELUGU LANGUAGE) Recipe | Main Course Recipe by Ramalaxmi Tatavarti |
| INGREDIENTS | 1 small size banana flower.
4-5 medium spiced green chillis.
2-3 red chillis
1 tsp of chana dal
1 tsp of urad dal
1 tbs of mustard seeds
4-5 curry leaves
3 tbs of oil
a pinch of turmeric
a pinch of asofetida
salt to taste | METHOD | Take couple of layers off the top of the flower.Then, finely chop the whole flower. In a curved pot add the chopped flower, turmeric,salt and 1tsp of tamrind juice(careful, too much tamrind will make the curry sour). Cook with some water until well done. Keep it aside, and in a skillet add oil and fry chana dal, urad dal, red chilles, curry leaves, asofetida and a few of the mustard seeds. Keep the rest away for the time being.
After frying all the seasonings, add chopped green chillies and the cooked flower into the skillet. Keep it on low fire for 2-3 mts until all the flavors come together. Finally grind the remaining mustard seed with a little water and make a paste. Add that paste to the curry . Mix well. Serve with hot white rice and Indian butter(ghee).
The taste reaches the peak when eaten with south indian fryums. |
